■Directions
- Make soup stock with dried bonito shavings and kelp.
- Roll the okra in salt and boil until the color is bright green.
- Cut off the end of the okra and slice into 0.5cm pieces.
- Mix egg yolk and egg white together.
- Add salt, soy sauce, and mirin to soup stock and place over heat.
- When soup boils, add eggs using a tool such as strainer, swirl in eggs and let them cook.
